Quick tiramisu:
Ingredients: 6 egg yolks, 3/4 cup sugar, 1 cup mascarpone, 1–1.5 cups strong cooled coffee, 2 tbsp Marsala/rum (optional), 24–30 ladyfingers, cocoa powder.
Method: whisk yolks+sugar over a bain-marie until thick and pale, cool; fold in mascarpone. Quickly dip ladyfingers in coffee (don’t soak), layer in dish, spread half the cream, repeat. Chill 4+ hrs, dust cocoa and serve.
